Fixes the CI breakage in config-nixos (nix flake check fails on the mcp-servers input).

  • sabnzbd-mcp: original upstream (jmagar/sabnzbd-mcp) was deleted from GitHub (404). Repointed to the jasonpaulso/sabnzbd-mcp fork, which preserves the same file layout (client.py + sabnzbd-mcp-server.py at root) and the /sabnzbd/api string that postPatch rewrites. Verified with nix build .#sabnzbd-mcp and nix flake check.
  • annas-mcp: removed package that was never completed (lib.fakeHash placeholders) and is not referenced anywhere in config-nixos. It was also breaking nix flake check.
